Ingredients (15)

15.00 ml lemon juice — fresh
25.00 ml cream — fresh
45.00 ml yoghurt — natural
5.00 ml garlic — cloves, crushed
7.00 ml fresh ginger — crushed
1.00 ml dried thyme
1.00 ml nutmeg — ground
2.00 ml paprika
3.00 ml cumin
700.00 g leg of pork — sliced
30.00 ml fresh chillies — 573
0.00 poppadoms — or naan bread
60.00 ml piquanté peppers — chopped
0.00 fresh parsley — chopped, to serve
0.00 salt and freshly ground black pepper — to taste

Method:

Mix together the lemon juice, cream, yoghurt, garlic, ginger, thyme, nutmeg, paprika and cumin.
Add the pork slices and marinate in the refrigerator overnight.
Place the pork slices on a baking tray, drizzle with olive oil and grill until cooked.
Shake the baking tray occasionally to ensure even cooking.
To serve, place cooked poppadoms on serving plates.
Spoon some of the pork on top, add a few chopped piquant peppers and a sprinkling of parsley.
Cover with another poppadom and top with another layer of pork, piquant peppers and parsley.
