Pork schnitzels

  • 4
    schnitzels, cut from a leg of pork
  • salt and pepper
  • 4
    slices mozzarella cheese
  • 1
    red pepper, diced
  • cake flour
  • 1
    egg, lightly beaten
  • dried breadcrumbs
  • oil for frying


Flatten the schnitzels with a meat mallet. Lightly season with salt and pepper. Place a slice of cheese on one half on each schnitzel and sprinkle with the diced red pepper. Fold the other half over the cheese and secure with toothpicks. Roll each filled schnitzel in cake flour, then in the beaten egg and finally in the breadcrumbs. Chill for 30 minutes. Heat sufficient oil in a pan and fry the schnitzels until golden brown. Drain on absorbent kitchen paper.
