Pork sausages with roasted vegetables

    olive oil
  • 400
    pork chipolata sausages
  • 8
    baby onions, halved
  • 5
    dried sweet basil
  • 1
    red pepper, seeded and quartered
  • 300
    mixed vegetables, cut into large cubes


25 minutes
Heat half the oil in a large frying pan and brown the sausages.
Toss all the ingredients together and place them in a large baking dish.
Cook in a preheated 200°C oven for 25 minutes or until the vegetables are tender and the sausages are cooked through.
Serve tossed with fresh basil and accompanied by rice or noodles.

Serve this dish in warm pita breads for a pork sausage and roasted vegetable schwarma. Or replace the pork sausages with lamb cutlets or chicken breast fillets.
