Pork sausage casserole

  • 500
    pork sausages
  • 250
    bacon rashers
  • 2
    onions, finely chopped
  • 2
    green peppers, seeded and diced
  • oil
  • 2
    apples, sliced
  • 2
    tomatoes, skinned and finely chopped

    chicken stock cube dissolved in boiling water
  • ml
    boiling water

    cake flour

    Worcestershire sauce

    bay leaf

  • pinch each sage and thyme

Switch on the oven grill. Wrap each of the pork sausages in a rasher of bacon and secure with a cocktail stick. Place the sausages on a baking sheet and grill on both sides until golden brown. Arrange in an ovenproof dish. Sauté the onion in oil. Add the green pepper and apple and stir-fry until glossy. Add the tomatoes, reduce heat and simmer until the tomatoes form a sauce. Add the chicken stock and simmer for a few minutes. Mix the cake flour, Worcestershire sauce, bay leaf, sugar and seasonings, add to the stock and bring to the boil while stirring. Pour the sauce over the sausages. Reduce the oven to 180 ºC (350 ºF), cover the dish and bake for about 20-30 minutes or until the sausages are done and the dish is warmed through. Serve with rice or pasta. Serves 6.
