Pork sausage casserole

    onions, sliced
  • 2
    cloves garlic, crushed
  • oil
  • 500
    pork sausages
  • 500
    potatoes, peeled
  • 4
    medium carrots, scraped
  • 100
  • salt and pepper
  • 5
    mixed herbs
  • 400
    chicken stock

Preheat the oven to 180 ºC (350 ºF). Sauté the onions and garlic in a little oil till soft. Turn into a large ovenproof dish. Boil the sausages in a little water till cooked before frying in heated oil till browned. Arrange on top of the onions. Slice the potatoes and arrange between the sausages. Cut the carrots into 2 cm pieces and add to the dish. Add the peas. Season with all the seasonings and add the chicken stock. Bake for 1 hour or till the vegetables are tender and cooked. Serve with rice. Serves 4-5.
