Pork sausage and rice casserole

  • 500
    pork sausages
  • oil
  • 1
    onion, finely chopped
  • 250
    uncooked rice, rinsed
  • 410
    whole tomatoes, finely chopped
  • 5
    dried basil or thyme
  • 5
  • 500
    chicken stock
  • salt and freshly ground black pepper


Fry the sausages in a little oil until brown on the outside. Remove from the pan and set aside. Sauté the onion in the pan fat until glossy. Add the rice and stir-fry for about 1 minute. Add the tomatoes and season with the basil and sugar. Add the chicken stock, reduce heat and simmer until the rice is tender and all the liquid has been absorbed. Return the sausages to the pan 10 minutes before the end of the cooking time. Season with salt and pepper to taste. Serve with a mixed salad. Serves 4-5.
