Ingredients (14)

6.00 potatoes — peeled, sliced
salt
25.00 ml oil
SAUCE
25.00 ml oil
2.00 onion — chopped
5.00 garlic — cloves, chopped
70.00 g tomato paste
200.00 ml wine — white
200.00 ml water
10.00 ml sugar
salt and freshly ground black pepper
fresh basil
8.00 pork loin chops — deboned

Method:

Preheat the oven to 200 ºC (400 ºF).
Place the potato slices on a greased baking dish, season with salt and brush with oil. Place in the oven and bake until slightly crisp.
Heat the oil in a pan and sauté the onions until soft. Add the garlic and sauté slightly.
Add the tomato paste, white wine, water and sugar. Season to taste with salt, pepper and basil.
Reduce the heat and simmer until the sauce thickens.
Pound the pork chops slightly with a mallet. Season with salt and pepper and fry in a pan until nicely browned on both sides.
Place the pork chops on top of the potato slices and spoon the sauce over them.
Serve immediately.
