Pork fillet with chicken liver

Ingredients (7)

450.00 g pork — fillet
salt and freshly ground black pepper — to taste
250.00 g chicken livers — cleaned
oil
250.00 g bacon
250.00 g button mushrooms — sliced
50.00 ml sour cream

Method:

Make a slit in the pork fillet and lightly season the inside with salt and black pepper. Fry the chicken livers in a little oil till just done but still slightly pink inside. Stuff the pork fillet with the chicken livers and secure the opening with cocktail sticks. Wrap the bacon round the pork fillet and season well with salt and pepper. Grill over the fire till just done or fry in a heated cast-iron pan.
Fry the mushrooms in a little heated oil till brown. Add the sour cream and simmer till the sauce thickens slightly. Season to taste with salt and black pepper. Serve with the fillet.
Serves 4.
