Ingredients (13)

15.00 ml fresh chillies — 573
5.00 ml sesame oil
75.00 g cashew nuts — unsalted
30.00 ml butter
1.00 garlic — cloves, crushed
1.00 fresh ginger — grated
2.00 leeks — washed and sliced
150.00 g mangetout
250.00 g broccoli — broken into florets
175.00 g baby corn
30.00 ml soy sauce — light
4.00 pork — chops
sea salt and freshly ground black pepper

Method:

Heat the two kinds of oil in a fairly large pan and fry the cashew nuts lightly. Remove from the pan and set aside.
Melt the butter in the pan and add the garlic, ginger and vegetables. Stir-fry for about 7 minutes, add the soy sauce and heat for another minute. Remove from the heat and add the cashew nuts.
Meanwhile, lightly brush a cast-iron pan with oil and heat until smoking hot. Fry the pork chops until done and brown on both sides, turning them only once.
Serve the pork chops with the vegetables stacked on top. Serve with rice.
