Pork chops with balsamic onions

  • 1
    clove garlic, crushed
  • 1
    lemon, grated peel and juice
  • 15
    olive oil
  • 4
    pork chops
  • salt
  • freshly ground black pepper
  • 12
    baby onions, peeled
  • 250
    balsamic vinegar
  • 125
    red wine
  • 30
    strawberry jam


Smear garlic, lemon juice and olive oil over chops. Brown quickly on both sides in a very hot frying pan. Turn the heat down and cook for 4 minutes on each side. Remove from pan, season and keep warm. In the same frying pan, bring onions, vinegar, red wine and strawberry jam to the boil. Simmer for 5 minutes, or until sauce is thick and syrupy. Serve each pork chop with balsamic onions on top of mashed potatoes. Serves 4.
