Ingredients (10)

SAUCE
65.00 ml butter
65.00 ml flour — cake
350.00 ml apple juice
200.00 ml orange juice
1.00 orange — peel, julienned
fresh herbs
MEAT
6.00 pork chops — fatty edges scored
6.00 cloves — whole
10.00 ml mustard powder
50.00 ml brown sugar — soft

Method:

Melt the butter in a medium-sized saucepan. Stir in the flour and heat for about one minute. Stir in the apple and orange juices. Heat, stirring continuously until the sauce comes to the boil and thickens. Add the orange rind and herbs. Cover and keep the sauce warm while grilling the pork chops.
Preheat the oven grill. Press a clove in the centre of each chop and place the chops on the rack of an oven roasting tin.
Mix the mustard and sugar and sprinkle one side of the chops with the mixture. Grill for 5-6 minutes, turn, sprinkle with the remaining sugar mixture and grill for another 5-6 minutes or until the chops are done.
Spoon a little of the sauce onto heated serving plates and place a chop on top of the sauce. Serve immediately with hot pumpkin purée (see recipe) and garnish the plates with black pepper and origanum leaves if desired.
