Ingredients (20)

800.00 g pork mince
3.00 bread — slices
100.00 ml milk
1.00 onion — finely chopped
2.00 garlic — cloves, finely chopped
45.00 ml fresh parsley — chopped
3.00 eggs
15.00 ml tomato paste
15.00 ml mustard — powder
salt and freshly ground black pepper
fresh marjoram
250.00 g breadcrumbs — dried
oil — for frying
SAUCE
5.00 ml oil
2.00 fresh chillies — deseeded, strips
1.00 onion — sliced into rings
125.00 ml stock — meat
125.00 ml cream
salt and freshly ground black pepper
lemon juice

Method:

Place the mince in a mixing bowl.
Remove the bread crusts and soak the bread in the milk. Add to the meat with the onion, parsley, garlic, eggs, tomato paste, mustard powder and seasonings to taste. Mix well.
Shape into 8 flat burgers and roll in the dried crumbs. Chill.
Heat oil in a pan and fry the burgers until done (they can also be grilled).
Meanwhile make the sauce. Heat the oil and fry the chillies and onion.
Add the stock and cook until the onion and chillies are soft.
Add the cream and simmer until some of the liquid has evaporated.
Season with salt and pepper and a little lemon juice.
Place in a food processor and process.
Serve with the pork burgers.
