BASE
45.00 g butter — melted
50.00 g flour — cake
1.00 ml salt
30.00 ml cheddar cheese — grated
FILLING
20.00 g butter
1.00 onion — finely chopped
125.00 g bacon — rindlless streaky back, chopped
250.00 ml spinach — cooked, finely chopped
2.00 eggs — large
250.00 ml milk
125.00 ml cream
30.00 ml flour — cake
125.00 ml cheddar cheese — grated

Method:

There is a good reason why Popeye got his super powers from spinach. It is high in a variety of vitamins including vitamin C, B2, A and K.

Make spinach a favourite
Spinach might not be on children’s top-ten list of favourite food but with some deception one can easily get this powerful veggie into one of their meals.

Popeye quiche
BASE: Pour melted butter into a 22 cm pie dish. Add flour, salt and cheese and mix ingredients together. Use your finger tips to press the dough to line the dish. Pick all over, using a fork. Bake in preheated 180 ºC oven for 10 minutes.

FILLING: Heat butter and fry onions until soft. Remove from the pan and set aside. Add bacon to the pan and fry until crisp. Drain off excess fat, then add spinach and mix well. Remove from the heat. Mix eggs, milk, cream and flour together. Season with salt and freshly ground black pepper. Add the spinach mixture and stir well. Pour into pie crust. Sprinkle with cheese and paprika and bake in preheated 180 ºC oven for 30 minutes until golden.

Tip
Make this quiche over the weekend and then you have at least two lunchboxes covered for the coming week.
