Polenta, pistachio and lime biscuits

Ingredients (12)

75 g butter — softened
75 g castor sugar
1 eggs
1 eggs — yolks only
1 cup flour — cake, sifted
3/4 cup maize meal — polenta
lime — zest only
2 tsp milk
1/4 cup pistachio nuts — shelled and chopped
ICING:
1 cup icing sugar — sifted
2 Tbs water — hot

Method:

Preheat oven to 180°C. Place butter, sugar, egg, egg yolk, flour, polenta and lime zest in the bowl of a food mixer.

Beat until combined. Add the milk and beat in until the dough comes together in a soft ball. Add the nuts.

Roll out dough between 2 sheets of clingfilm until it’s about ½–1cm thick. Place in freezer for 10 minutes or until firm. Cut out biscuits with biscuit cutter and place on a lined baking tray.

Bake for 10–12 minutes, or until golden. Allow to cool completely on a cooling rack before icing.

To make the icing, sift icing sugar into a bowl and stir in water. Drizzle mixture over biscuits and top with extra lime zest.
