Poached nectarines with ricotta

  • 4
    nectarines, depending on size
  • 100
    fresh orange juice
  • 45
    light brown sugar
  • 65
  • 1
    cinnamon stick
  • 100
    ricotta cheese
  • thinly sliced orange peel


Halve fruit and remove pips. Set aside. In a large saucepan, bring orange juice, sugar, water and cinnamon to boil. Reduce heat and add fruit. Cook for 6 minutes, or until fruit is soft but riot mushy, and coated with syrup. Remove and place on a serving, platter. Meanwhile, bring syrup to boil and allow to thicken. Spoon ricotta into each nectarine half and top with orange strips. Serve with syrup. TOTAL KILOJOULE COUNT: 2 510 kJ (600 Cal). A portion: 630 kJ (150 Cal).
