Poached nectarines with ricotta

4.00 nectarines
100.00 ml orange juice — fresh
45.00 ml brown sugar
65.00 ml water
1.00 cinnamon — stick
100.00 ml ricotta cheese
orange — zest only

Method:

Halve fruit and remove pips. Set aside.
In a large saucepan, bring orange juice, sugar, water and cinnamon to boil. Reduce heat and add fruit. Cook for 6 minutes, or until fruit is soft but riot mushy, and coated with syrup. Remove and place on a serving, platter.
Meanwhile, bring syrup to boil and allow to thicken.
Spoon ricotta into each nectarine half and top with orange strips. Serve with syrup.
