Poached chicken with watercress mayonnaise

Ingredients (11)

4.00 chicken breast fillets — large
450.00 ml stock — chicken
60.00 ml wine — white
2.00 bay leaves
5.00 ml sugar
5.00 black peppercorns — whole
SAUCE
1.00 watercress
190.00 ml yoghurt — natural
45.00 ml mayonnaise
5.00 ml lemon juice
salt and freshly ground black pepper

Method:

Wipe chicken breasts with a damp cloth.
Bring stock, wine, bay leaves, sugar and peppercorns to boil.
Add chicken breasts, reduce heat and simmer for 4 minutes. Turn and simmer for a further 4 to 5 minutes, or until done. Breasts should be moist and slightly pink at centre.
Remove from pan and allow to cool.
SAUCE: Purée watercress to form a smooth paste. Stir in remaining ingredients and season to taste.
Chill and serve drizzled over moist poached breasts.
