Plum cordial

  • 500
    white granulated sugar
  • 1
    ripe plums
  • 750


1. Sterilise glass jar (or jars) and add the sugar. 2. Pierce skin of each plum with a fork several times and pack plums tightly on top of sugar. 3. Fill with vodka and stir sugar every week with the handle of a wooden spoon. 4. Continue until fruit becomes translucent, of for at least 3 months. 5. Use cordial as flavour enhancer for sauces, as a drink on crushed ice with a sprig of mint, or on ice cream.
