Plum and raisin bread

    softened butter

    thick slices raisin bread
  • 30
    castor sugar
  • 8
    ripe plums, sliced
  • 65
    flaked almonds
  • 65
    soft brown sugar
  • mint for garnishing
  • ice cream or whipped cream for serving


Preheat the oven to 200 °C and spray a fairly large baking sheet with non-stick spray. Butter the slices of raisin bread and sprinkle generously with castor sugar. Arrange the sliced plums on top of the bread slices, interspersing with the flaked almonds. Sprinkle generously with brown sugar and arrange on the baking sheet. Bake for 25 to 30 minutes (depending on how ripe the plums are) until the plum slices are soft but still retain their shape and the sugar is slightly caramelised. Serve hot (otherwise the bread becomes hard and unappetising) with a scoop of ice cream or whipped cream. Garnish with mint if desired.
