Ingredients (12)

100.00 g bulgur wheat
50.00 ml fresh parsley — chopped
25.00 ml fresh mint — chopped
30.00 ml lemon juice
30.00 ml fresh chillies — 573
salt and freshly ground black pepper
4.00 spring onions — chopped
1.00 red onion — diced
340.00 g baby corn — tinned, drained
250.00 g plums — stoned, chopped
1.00 mango — ripe, firm, peeled and diced
75.00 g barley

Method:

Cover bulgur wheat with cold water and soak for 15 minutes.
Chop parsley and mint and place in a salad bowl with lemon juice, oil, salt and pepper. Add spring onions, red onion, drained corn, plums and mango.
Drain bulgur wheat, add to salad and toss with barley, which has been boiled for 15 minutes and drained.
