Pizza with chorizo chilli and red onion

    red onions, thinly sliced

    olive oil

    lemon juice

    large readymade pizza bases

    tomato purée
  • 175
    chorizo sausages, cut into chunks
  • 1
    red chilli, seeded and finely chopped (use more if desired)

    mozzarella cheese, grated (optional)


Preheat the oven to 220 ºC. Sauté the red onions in the olive oil until they begin to soften. Remove from the heat. Add the lemon juice (it helps retain the colour). Spread the pizza bases with the tomato purée and arrange the onions, sausages and chillies on top. Sprinkle with mozzarella (if using). Bake for 15 to 20 minutes or until the base is done and crisp and the cheese (if added) has melted.
