Pita bread with ham and cucumber salad

    cucumber, diced
  • 400
    chickpeas, drained (optional)

    small onion, finely chopped
  • 30
    chopped fresh parsley
  • 1
    lemon, juice
  • 30
    olive oil
  • salt and freshly ground black pepper
  • 6
    bought pita breads
  • 200
    paper-;thin slices smoked ham


Mix the diced cucumber, chickpeas, onion and parsley. Pour over the lemon juice and oil, stir and season well with salt and pepper. Grill the pita breads until just lightly browned and puffy. Make a slit in the pita breads and use a knife to ease them open. Fill the hollows with the cucumber salad and ham slices and serve. Alternatively, wrap in aluminium foil and chill for about four hours before serving.
