Pink salmon and vodka pasta

Ingredients (9)

500.00 g pasta — spaghetti
olive oil — for frying
1.00 onion — finely chopped
30.00 ml fresh dill — chopped
30.00 ml vodka — optional
190.00 ml cream
salt and freshly ground black pepper — to taste
200.00 g salmon — pink
10.00 ml fresh dill — chopped

Method:

Cook pasta according to packet instructions.
Meanwhile, heat olive oil and gently sauté onion until soft and translucent, about 5 minutes. Do not allow to brown.
Add fresh dill (or use 10 ml (2 tsp) dried), vodka and cream and heat through. Season to taste.
When pasta is ready, drain and drizzle lightly with olive oil and season with black pepper.
Reheat sauce, break salmon into chunks and very gently stir into sauce. Add extra dill and serve on pasta with freshly grated Parmesan cheese and a cucumber salad on the side.
