Ingredients (6)

4.00 eggs — white
125.00 ml castor sugar
salt — pinch
4.00 pineapples
250.00 ml pineapple — grated, juice squeezed out
5.00 ml fresh ginger — grated

Method:

Preheat oven to 200 ºC.
Place egg whites, sugar and salt in a large bowl. Beat with an electric beater until they hold a stiff peak – take care not to overbeat. Gently fold in pineapple and ginger.
Spoon mixture into pineapple shells. Place on a baking sheet and bake for 10 minutes, or until lightly browned on top.
Serve immediately.
