Pineapple chicken burgers with mango salsa

  • 4
    chicken breast fillets - butterflied to ensure even cooking
  • 1
    vegetable oil
  • Salt and pepper to taste
  • 1
    small pineapple - peeled and sliced
  • 4
    ciabatta rolls - opened and buttered
  • Fresh rocket


Start with the mango salsa so that it can chill while you make the burgers.

Heat your sandwich press. Oil the chicken lightly on both sides and season with salt and pepper.

Place the chicken in the sandwich press and "grill" for about 6-8 minutes, depending on how think you kept the chicken. While the chicken is grilling, assemble your burgers.

Place some rocket on the one half of the bun, top with a slice of pineapple and wait for the chicken. Once the chicken breasts are ready place on the burgers and top with the mango salsa.
