Ingredients (9)

8.00 chicken — pieces
30.00 ml sesame oil
420.00 g pineapple chunks — and syrup
5.00 ml fresh ginger — chopped
65.00 ml soy sauce — light
15.00 ml brown sugar
salt and freshly ground black pepper
sesame seeds
fresh coriander — to garnish

Method:

Rub chicken with sesame oil and place in an ovenproof dish.
Drain pineapple chunks and set aside, reserving juice. Add ginger, soy sauce, brown sugar and seasoning to half the reserved juice.
Pour mixture over chicken and bake at 180 ºC for 30 minutes. Toss pineapple chucks and remaining juice (if necessary) into chicken mixture and bake for a further 10 minutes.
Sprinkle sesame seeds over and bake for a further 5 to 10 minutes.
Serve garnished with fresh coriander.
