Ingredients (9)

250.00 g butter
1.00 cinnamon — stick
1.00 onion — small, chopped
500.00 g long grain rice — well rinsed, cooked
250.00 ml lentils — green
250.00 g dates — fresh, chopped
125.00 g apricots — dried, sliced
60.00 g almonds — chopped
90.00 g currants — dried

Method:

In frying pan, melt half the butter and add cinnamon and onion. Cook over medium heat until onion is soft and translucent. Melt remaining butter in a saucepan and add 625 ml (2 1/2 cups) warm water. In a large saucepan, mix onion mixture, butter mixture and remaining ingredients, stirring to combine. Cover and cook over lowest possible heat for 1 hour. Do not remove lid. Remove from heat and allow to stand for 15 minutes before serving.
Serves 8.
