30.00 ml strooisuiker
10.00 ml lemon — peel
1.00 apples — Granny Smith, grated
150.00 ml fruitcake mix
155.00 g sugar
2.00 eggs — separarted
100.00 g butter
200.00 g cake flour
5.00 ml mixed spice
3.00 ml cinnamon — ground
5.00 ml baking paper
5.00 ml koeksoda
1.00 ml sout
Versiersel
50.00 g butter — soft
140.00 g icing sugar
65.00 g cheese — room temperature
5.00 ml lemon
10.00 cherries — or nuts, to garnish

Method:

1. Smeer ‘n Prestige muffinpan met 12 koppies of ‘n Prestige jumbo-muffinpan met ses koppies.
2. Klop die roomkaas, strooisuiker en
die helfte van die lemoenskil tot goed
gemeng en hou eenkant.
3. Meng die appel, vrugtekoekmengsel, suiker, eiers, gesmelte botter en die res van die lemoenskil en hou eenkant.
4. Sif die droë bestanddele in ‘n groot
bak. Voeg die vrugtekoekmengsel by en meng liggies tot net gemeng. Maak die muffinpan-koppies halfvol met die deeg en skep 5ml van die roomkaasmengsel bo-op elkeen. Skep
nog deeg bo-op tot die muffinpan-koppies driekwart vol is.
5. Bak in voorverhitte oond vir 10 tot 15 minute (25 minute vir jumbo muffins) of tot ‘n toetspen skoon uitkom. Laat op ‘n draadrak afkoel.
6. Versiersel: Sit al die bestanddele in ‘n bak en klop tot romerig. Smeer dit op die muffins net voor jy dit voorsit, en versier met kersies of neute.
