Ingredients (9)

1.00 kg potatoes
500.00 g apples
45.00 ml lemon juice
150.00 g gherkins
45.00 ml fresh parsley — chopped
DRESSING
300.00 g mayonnaise
100.00 ml gherkins — juice reserved
sugar — pinch
fresh parsley — to garnish

Method:

Boil the potatoes in their jackets for 20 to 25 minutes, drain, peel and cut into cubes while still warm.
Cut the apples in half and remove the cores, then cut into small cubes, pour the lemon juice over the cubes and allow to stand for 15 minutes. Slice the gherkins and add to the potatoes.
DRESSING: Mix mayonnaise, gherkin liquid and sugar together and season, to taste. Pour over the potatoes.
Add the apples and the parsley and mix carefully. Garnish with parsley.
