Ingredients (8)

1.00 kg cherries — ripe, firm
sterilised jars
1.00 Litres vinegar — white wine
600.00 g sugar — granulated
6.00 cloves — crushed
4.00 juniper berries — curshed
2.00 lemons — zest only
1.00 cinnamon — stick

Method:

Rinse and dry the cherries, discarding any damaged fruit.
Cut the stalks down to about 1 cm and pack the fruit tightly into the jars.
Bring the remaining ingredients to the boil in a stainless steel or enamel pan, then simmer for 10 minutes.
Remove the cinnamon stick and pour the liquid over the cherries until they are well covered.
Store in a cool dark, dry cupboard.
