Phyllo baskets

  • 4
    phyllo pastry sheets
  • 35
    butter, melted
  • Greek yoghurt or ice cream
  • 450
    fresh fruit
  • fresh mint to garnish


Cut the phyllo pastry in 15 cm squares.
Use a little butter to grease four large muffin tins.
Brush the pastry squares with butter and place four greased sheets on top of each other in each muffin tin.
Bake at 190 °C for 12 to 15 minutes until golden.
Cool on a wire rack.
Once the baskets have cooled, fill with yoghurt or ice cream and top with fresh fruit.
Garnish with fresh mint.
