Pesto crusted fish

    slices of white bread, crusts removed, made into crumbs
  • 60
    basil pesto
  • 640
    fresh fish
  • 4
    tomatoes, sliced
  • 4
    basil leaves, to serve

Cut four 25 cm squares of baking paper or foil to make parcels. Mix together the breadcrumbs and pesto. Season fish with salt and freshly ground black pepper, to taste. Put slices of tomato along the centre of each piece of paper or foil. Top tomatoe slices with fish, then press the pesto breadcrumbs on top of the fish to create a crust. Fold up packages and secure them with string. Bake in a preheated oven at 200 ºC for 15-20 minutes, garnish with basil and serve the parcels tied for guests to open. Serves 4.
