  • fresh herbs, large handful, such as parsley, basil, coriander
  • nuts or seeds - small handful
  • (use pinenuts if you can bear to pay for them, it’s worth it for a treat)
  • olive oil - a splash
  • lemon juice - a good squeeze
  • Pinch of salt


Finely chop the herbs. Grind everything in the pestle and mortar until you have a nice consistency.

Store in the fridge, for a few days.
