Pernod kebabs

  • 45
    olive oil
  • 45
  • 1
    lemon, juice and rind
  • a few sprigs of thyme
  • 10
    caraway seeds
  • 500
    fish or chicken breast fillets, cubed
  • lemon slices
  • salt and freshly ground black pepper


Blend olive oil, Pernod and lemon juice and rind.
Add the thyme and caraway seeds.
Cover the fish or chicken breasts with the marinade, cover the dish and leave to marinate for 30 minutes to two hours.
Soak 36 wooden skewers in water and thread three fish or chicken cubes onto each one, along with a slice of lemon.
Arrange on a baking sheet and grill for 10 to 15 minutes under a hot oven grill until just done but not dry.
Turn halfway through the grilling time.
Season generously with salt and freshly ground black pepper and serve immediately.
