Ingredients (5)

240.00 g white sugar
300.00 ml water
500.00 ml vodka — or brandy
2.00 ml peppermint essence
Food colouring — green

Method:

Place the white sugar and water in a saucepan and heat until all the sugar has dissolved, stirring continuously. Boil for six minutes to form a thick syrup. Add the vodka or brandy, peppermint essence and food colouring, mix well and pour into a clean jar or bottle. Screw on the lid and store in a dark place for at least two weeks before using.
Makes about 750 ml liqueur.
