Pepper and olive pâté

  • 3
    green or red peppers, seeds removed
  • 2
    cloves garlic
  • 300
    stoned black or green olives
  • olive oil
  • 45
    fresh breadcrumbs
  • 30
    parsley, chopped
  • 5
    soy sauce
  • 45
    mayonnaise (or more to taste)
  • salt and black pepper


1. Chop peppers, garlic and olives in a food processor. Heat oil in a frying pan, cook over a medium heat for 5 to 8 minutes.
2. Cool slightly and return to food processor with the rest of the ingredients, except oil. With the motor running, add just enough oil to make a smooth pâté. Place in a bowl, cover and refrigerate overnight. Serve with rye bread and pickled vegetables.
