Penne tossed with crisp bacon and cherry tomatoes

  • 30
    olive oil
  • 3
    garlic cloves, sliced
  • 15
    fresh rosemary quills
  • 200
    bacon, chopped
  • 200
    cherry tomatoes
  • salt and freshly ground black pepper
  • 500
    penne, cooked al dente
  • 150
    hard goat's milk or sheep's milk cheese, sliced
  • extra-virgin olive oil, to drizzle

Heat the oil in a frying pan.
Add the garlic, rosemary and bacon.
Cook for two minutes and add the tomatoes.
Cook for another minute or so, just until the tomatoes burst.
Season and toss with cooked pasta.
Spoon into warmed bowls and top with sliced cheese.
Drizzle with extra-virgin olive oil just before serving.
