500.00 g pasta — spinach-flavoured penne
50.00 g parmesan cheese — grated
75.00 ml mascarpone cheese
50.00 g blue cheese — creamy, crumbled
45.00 ml fresh chillies — 573
1.00 garlic — cloves, crushed
30.00 g fresh basil
120.00 g rocket
30.00 ml lemon — peeled and grated
salt and freshly ground black pepper
240.00 ml sun-dried tomatoes — soaked in vinaigrette, drained

Method:

Cook penne according to packet instructions.
Meanwhile put cheeses, oil, garlic and basil in a large saucepan and cook over very gentle heat until melted.
Drain pasta, add to cheese mixture. Stir in the rocket and lemon peel, with plenty of seasoning, and cook until rocket has wilted. Serve with oven-dried tomatoes.
