250.00 ml flour — cake
125.00 ml pecan nuts — toasted, chopped
5.00 ml Baking powder
1.00 ml Bicarbonate of soda
1.00 ml salt
250.00 ml Buttermilk
90.00 ml butter — melted
1.00 eggs — extra-large, lightly whisked
SAUTÉED FRUIT
2.00 bananas
1.00 apples — red
0.00 grapes
0.00 butter
0.00 honey
0.00 cinnamon — ground

Method:

WAFFLES:

Mix the flour, nuts, baking powder, bicarbonate of soda and salt together.

Stir in the buttermilk, butter and egg to form a thick batter.

Heat a waffle pan and lightly oil the bottom.

Drop spoonfuls of the batter in the pan, spreading evenly over the entire surface with a spatula.

Close the pan and cook until golden brown and done.

Remove from the pan and keep warm in the warming drawer.

SAUTÉED FRUIT:

Halve the bananas lengthwise.
Core the apple and cut into wedges.

Heat a knob of butter in a frying pan and rapidly stir-fry the fruit.

Drizzle with a little honey and stir-fry until lightly caramelised (don’t fry too long or the fruit will be mushy).

Serve on top of the waffles, sprinkled with the cinnamon.

Hint

Make crumpets instead of waffles or buy readymade waffles.
