Ingredients (13)

300.00 g flour — brown bread
300.00 g flour — white bread
60.00 ml sugar
10.00 ml cumin — ground
10.00 g Superbake Instant Yeast
10.00 ml salt
5.00 ml dried chillies — crushed
1.00 red pepper — finely chopped
100.00 g pecan nuts — chopped
45.00 ml fresh coriander — chopped
375.00 ml water
60.00 ml oil
butter — melted, for brushing

Method:

1. Mix the first seven ingredients in a large bowl. Mix in red pepper, pecans and coriander.
2. Whisk water and oil to blend, add to the dry ingredients and mix to combine. Turn out on a surface dusted with flour and knead until the dough becomes smooth and elastic.
3. Place dough in an oiled bowl, cover with plastic wrap and leave to rise to double its volume.
4. Punch dough down and knead on floured surface, form into a ball. Place on greased baking tray, leave to rise until doubled in size and bake in preheated 200 ºC oven for about 35-40 minutes or until done. Remove from oven and brush with melted butter.
Makes 1 loaf
