Ingredients (4)

1.00 kg sugar
1.00 Litres water
2.00 kg pears — peeled
375.00 ml brandy

Method:

Heat the sugar and water in a saucepan, stirring continuously until the sugar has dissolved and before the mixture comes to the boil. Bring to the boil, place the pears in the syrup and simmer until tender.
Remove the pears from the syrup and arrange in clean, sterilised jars. Reduce the syrup by about a third. Fill the jars halfway with the syrup and top up with brandy. Seal.
