Ingredients (12)

8.00 pears — ripe, peeled and cored
350.00 g plums — washed, halved and stoned
20.00 ml fresh ginger — grated
150.00 g white sugar
1.00 lemon — zest and juice
225.00 g flour — cake
salt — just a pinch
15.00 ml Baking powder
125.00 g butter
1.00 eggs — extra-large
50.00 ml milk

Method:

1. Preheat the oven to 220 ºC. In a large bowl, mix together the pears, plums, ginger, 75 g sugar, and the lemon rind and juice. Transfer to ovenproof dish.
2. Sift the flour, salt and baking powder into a bowl. Rub in the butter until the mixture resembles breadcrumbs and stir in 30 ml sugar.
3. Beat the egg and milk together and gradually stir it into the mixture. Knead lightly to form a smooth dough, then break off pieces of the dough and place them all over the top of the fruit.
4. Sprinkle the remaining castor sugar over the dough, place in the oven and bake for about 35 to 45 minutes.
