Ingredients (14)

Mayo:
1 eggs — large
2 ml salt
1 garlic — cloves, chopped
1/2 tsp mustard
1 tsp lemon juice
5 ml sugar
225 ml sunflower oil
2 spring onions — chopped
125 ml blue cheese — grated
Salad:
lettuce — crisp
avocado — sliced
pears — sliced
pecan nuts — toasted
sprouts

Method:

Mayonnaise:
Put the egg, salt, garlic, mustard, lemon juice, sugar and 25 ml of the
oil and give it a blitz, then with your blender running on low pour in
the remaining oil in a slow steady stream (through the hole of the lid).
Remove from the blender, add the spring onions and the grated cheese.

Salad:
Slice the lettuce and mix with a little of the mayo, put that into a
food ring first, then the sliced avo and so on, a lovely starter or a
light lunch.
