Ingredients (14)

175.00 ml peanuts
15.00 ml peanut oil
5.00 ml curry powder
15.00 ml brown sugar
375.00 ml coconut milk
15.00 ml fresh lime juice
60.00 ml soy sauce
45.00 ml fresh coriander
25.00 ml soya sauce — thick, drizzle
sesame seed crackers: cake flour
30.00 ml sugar
60.00 ml vinegar — white wine
15.00 ml cumin — ground
30.00 ml sesame seeds — black
100.00 ml water

Method:

Process the sauce ingredients in a blender.

Crackers: Preheat the oven to 180°C.

Mix together flour, sugar, vinegar, cumin and sesame seeds.

Add enough water to make a smooth paste.

Leave to rest for 15 minutes.

Drop spoonfuls of a greased baking tray.

Bake for 10 minutes or until golden around the edges.

Lift and leave to cool.

To serve as a dip with crackers, drizzle a little thick soya sauce over.
