Ingredients (9)

45.00 g butter — unsalted
125.00 ml peanut butter
115.00 g brown sugar
1.00 eggs — whites only
5.00 ml vanilla — essence
55.00 g flour — cake
1.00 ml Baking powder
salt — just a pinch
dark chocolate — melted

Method:

1. Place butter in a 1,5 litre soufflé dish. Cook, uncovered, at 100 percent in a 650-700 watt oven for 2 minutes.
2. Remove from oven, stir in peanut butter, sugar, egg white and vanilla essence. In another bowl, sieve flour, baking powder and salt together. Combine two mixtures, allow to stand for 5 minutes.
3. Scrape batter into a square or oblong microwave dish. Cook, uncovered, for 5 minutes, or until set.
4. Remove from oven, cut into 16 squares while still warm. Remove from dish and allow to cool completely. For an alternative dessert, serve scoops of chocolate or butterscotch ice cream on a square of peanut butter blondie and drizzle with melted chocolate.
