Ingredients (8)

30.00 ml peanut oil
1.00 onion — grated
1.00 kg lamb — stewing meat, cubed
125.00 ml peanut butter
70.00 g tomato paste
600.00 ml stock — vegetable
10.00 ml fresh thyme — chopped
4.00 carrots — large, peeled and sliced

Method:

1. Heat oil in a large saucepan and sauté onion for one minute. Add meat and cook until browned.
2. Mix peanut butter and tomato paste with 100 ml cold water. Add to the saucepan and mix well. Add stock, and thyme and bring to the boil. Reduce heat, cover and simmer for one hour.
3. Add carrots and simmer for a further half hour or until meat is tender. Season to taste and serve with cooked rice.
