Ingredients (7)

30.00 ml butter
2.00 leeks — well rinsed
2.00 garlic — cloves, peeled and chopped
500.00 ml stock — vegetable
750.00 ml peas — frozen, thawed
125.00 ml milk
5.00 ml nutmeg — ground

Method:

Melt butter in a large saucepan.
Add leeks and garlic and saut@eacute until leeks are soft.
Add stock and peas, cover and simmer for about five minutes.
Allow to cool slightly.
Transfer mixture to a food processor and blend until smooth.
Return to the saucepan and add milk and nutmeg.
Heat through while stirring constantly.
