Pea, mozzarella and fig bruschetta

Ingredients

    ml
    crème fraîche
  • 2
    buffalo mozzarella balls, sliced
  • 15
    ml
    chopped mint leaves
  • 30
    ml
    extra-virgin olive oil, to drizzle
  • 340
    g
    peas, blanched
  • 1
    loaf
    ciabatta loaf, sliced and toasted
  • 3
    ripe figs, torn in half
  • 5
    ml
    salt and black pepper, to taste
  • 6
    large basil leaves
 

Method

 
Put the peas, mint and crème fraîche in a blender and purée. Season. Spread on ciabatta slices, and top each with a slice of cheese, a basil leaf and half a fig. Drizzle olive oil over the top and some cracked black pepper.
