Ingredients (9)

125.00 ml crème fraîche
2.00 mozzarella cheese — buffalo ball
15.00 ml fresh mint — chopped
30.00 ml olive oil — extra virgin, to drizzle
340.00 g peas — blanched
1.00 loaf ciabatta — sliced, toasted
3.00 figs — torn in half
5.00 ml salt and freshly ground black pepper
6.00 fresh basil

Method:

Put the peas, mint and crème fraîche
in a blender and purée. Season. Spread
on ciabatta slices, and top each with a
slice of cheese, a basil leaf and half a
fig. Drizzle olive oil over the top and some cracked black pepper.
