Pea and lettuce soup

    olive oil

    leek, finely sliced
  • 1
    garlic clove, crushed
  • 1
    litre vegetable or chicken stock
  • 1
    butter lettuce, stem removed, finely slicced
  • 250
    fresh or frozen peas
  • 5
  • 20
    mint leaves
  • salt and milled pepper


20 minutes
Heat oil in a large pot.
Add leek and garlic and sauté until the leek is soft.
Add stock, lettuce and peas and bring to the boil.
Reduce heat and simmer for 15 minutes or until peas are soft.
Remove from heat and add sugar and mint.
Pour soup into a blender or food processor and blend until smooth. Season well and chill.
