Ingredients (10)

200 g raisins
1 Tbs honey
200 g brown sugar
240 ml water
200 g butter
300 g flour — plain
2 tsp Bicarbonate of soda
75 g mixed nuts — chopped
225 g glacé fruit
milk

Method:

Preheat the oven to 180 C and grease a 20cm cake tin.

Put the raisins, the honey, the sugar and the water in a large saucepan, bring to the boil and boil for 5 minutes – remove the saucepan from the heat and allow to cool before adding the butter and combining everything well.

Add the flour and bicarbonate soda mixture,  the nuts, the crystallized fruits and enough milk to make a soft mixture.

Pour into the prepared tin and bake for an hour – allow to cool down before serving.
