Pasta with herb sauce

  • 3
    cloves garlic
  • 750
    fresh basil leaves
  • 2

    olive oil
  • 190
    fresh Parmesan cheese
  • coarsely ground black pepper
  • 500
    thin ribbon noodles


Place the garlic in a food processor along with the basil and salt. Process until finely chopped. Gradually add the olive oil while the motor is running. Finally add the cheese, process until well blended and season with black pepper. Cover the sauce with plastic wrap, ensuring it is well sealed, and store in the fridge until needed. Cook the ribbon noodles in rapidly boiling water until just done, drain and mix with as much of the herb sauce as you like.
